Within the iconic Metropol Hotel, Remy Kitchen Bakery emerges as a refined synthesis of heritage and modern design, where warm materials and gentle illumination craft a serene, contemporary dining experience.
Located within the legendary Metropol Hotel, Remy Kitchen Bakery is envisioned as a contemporary sanctuary shaped by minimalist touches and quiet elegance. Its design honours the building’s century-old heritage while introducing a refreshing identity that feels both current and timeless, allowing history to breathe within a softly modern frame.

S+S Studio reinterprets the character of a classic French café through the lens of modern minimalism, balancing emotional warmth with crafted restraint. Rich wood paneling provides a tactile softness that contrasts with polished stainless-steel accents, creating a visual dialogue where nostalgia and contemporary clarity meet with effortless harmony.
The two-level space is enveloped by tall windows that invite natural light and provide a sense of openness. Translucent orange glass blocks visually connect the floors, diffusing light into an airy glow that unifies the composition. A staircase shaped with veneered panels and stone guides guests between levels, becoming a subtle architectural bridge that blends historic forms with modern precision. Nearby, the wine room offers an intimate contrast, accessed through a separate hotel entrance that enhances its exclusivity.

Historic elements were integrated with care, allowing original craftsmanship to remain present within the refined interior. On the upper level, plasterwork and metal frames are preserved behind glass panels of varying transparency, their intricate textures revealed through gentle illumination. The vintage flooring is paired with custom-matched modern tiles, ensuring continuity across the old and the new. Thoughtful planning ensures that seating is maximised without compromising comfort or fluidity, making every corner feel intentional and inviting.
Guests are welcomed into a spacious atrium that opens towards the second floor, establishing an atmosphere of calm and generosity. American walnut and stainless steel form a harmonious palette of warmth and clarity, while the preserved flooring anchors the space with historic resonance. The interior unfolds through natural materials and soft textures, with warm wood tones flowing across the walls and cooler steel accents adding refined balance. Lighting is carefully orchestrated, blending ambient tones with focused highlights that bring depth to the plasterwork and sculpt the interior with gentle nuance.

Curvaceous sofas echo the building’s architectural heritage, offering comfort wrapped in sophistication. Walnut tables introduce natural warmth, their clean lines underscoring the minimalist elegance of the space. Within the wine room, a natural marble tasting station becomes the centrepiece, surrounded by deep wine-coloured walls, lacquered details and layered drapery that create an intimate, immersive ambience. Soft lighting completes the experience, inviting guests to slow their pace and savour each moment within this refined urban retreat.
